Each lesson is a full dinner party menu to give the students the confidence to handle various dishes.
Menu for class:
Lesson one: Pumpkin and apple soup. Stuffed chicken breast with a pistachio mouse. Green bean salad and hazelnut mash. Pavlova.
Lesson two: Prosciutto wrapped asparagus with toasted almonds. Herb crusted rack of lamb with dauphinose potatoes and tossed snow peas. Passion fruit tarte.
